No plot spoilers, but based on what I seen in season seven, you can’t tell that Justin Roiland was ever replaced as the voice actor for both Rick and Morty.
You can tell but the voices are not that bad or noticeable.

I would like to recommend code lyoko for you guys to watch. Its from the early 2000s cartoon network and it's a little dated but I love the passion of the story and the world of lyoko. also the animation of lyoko.

Rick and Morty did fall off a bit but the most recent season was much better than the last couple so its on the upswing
I'm excited to watch through this with ya'll I remember falling off Between seasons 3 and 4, it just took too long between seasons and I just never went back to it.
One of if not my favorite Season premier episodes. The only other one that comes close is Season 6's episode 1
