Among the new, harsher terms, was a prohibition of regrowing their hair for five hundred moons. Even if firebenders would shave parts of their head bald after losing an important Agni Kai, they would leave the top-knot untouched except in circumstances akin to death"
Them cutting their knots signifies like shedding their honor and not being a part of that family or nation anymore. I believe this is based off a Chinese belief... (unsure). I do know that avatar nations etc are loosely based off Asian cultures.
Samurai cut their hair when they're rebelling. In modern days, Asian women who cut their hair as a symbol or rebellion or heartbreak ie: a break up.
