The one things that slightly upsets me about this episode was they got rid of the three pepper boys that were Usopps "crew" so Kaya is actually alone now.

I’m so happy they went with Kunia having an “accident” like the manga cause this adaptation hasn’t been pulling punches on the darkness and I REALLY didn’t want to see a girl off herself?

I have the same vibe as you about the way they're weaving plot threads. The manga was written in a very stream-of-consciousness sort of way that didn't allow for the kind of interweaving that Oda might have preferred if he'd written it all at once. It feels like this version uses that interweaving to facilitate a shorter-form telling.
Also Kong is the World Government Commander in Chief. He's right below the five elders.

You asked about Commander-in-Chief Kong near the end. He's an obscure character that hasn't had many appearances, so I'm not surprised you don't remember him.
He first made his debut in Chapter 0. He was the Fleet Admiral around the time of Roger's execution. He made his debut in the series proper as Commander-in-Chief in chapter 594 / Episode 511. He was the guy that Sengoku tendered hiss resignation to after the events of Marineford.
According to the Wiki, the Commander-in-Chief ranks directly below the five elders and officially oversees the Marines, Cipher Pol, and the Warlords. The Fleet Admiral only officially has command over the Marines.

Yo! I just realized that end of episode 4 spoils the Garp Luffy reveal in end of Water 7 Saga. If y'all know any fellow reactors that haven't finished Post-Enies Lobby, they're gonna get spoiled on Garp if we don't warn them!

I know some reactors that are not near Water 7 just yet but I'd rather they watch the live action sooner if that's what they wish. Of all the possible spoilers, this one is not the worst. Personally I'm lowkey salty they revealed it season 1 but I'll live.

Zoro and Garp's actors are the ones I know. I know Vincent Regan through various british TV shows, and I know Mackenyu because he's done like THIRTEEN different live action anime/manga to film adaptations lol. And he's Sonny Chiba's kid.
